I have to say I'm totally satisfied with both knives, the first knife I ordered while opening the box the knife fell out and sliced my finger. I was not upset about that it was my fought for being so careless....but it made me happy at the fact that it cut me that fast. To me my new knife was just saying hello, I love my knife I use it everyday at the restaurant I work at and I use it to cut wag- yu, filets, NY strips..I filet salmon, halibat,swordfish,flounder....sea bass ( bronzino) and many types of vegetables. I will be ordering the boning knife soon and honestly I have a vast amount of chefs including wusthof and cutco but the knives I bought from you are by far my favorite.
